Description

These flaky ube croissants are made with just 3 ingredients and come together in 30 minutes! Buttery puff pastry wrapped around sweet ube filling creates an impressive dessert that’s deceptively simple to make.

Equipment

Instructions

  1. Preheat and cut the dough: Preheat oven to 400°F. Cut the puff pastry sheet in half, then cut each half diagonally from corner to corner to create 4 triangles.
  2. Add the ube filling: Place 1 tablespoon ube halaya on the wide end of each triangle, opposite the pointed tip.
  3. Prepare the egg wash: Crack the egg into a small bowl and whisk thoroughly. Using a pastry brush, brush egg wash onto the dough from the ube filling up to the pointed end.
  4. Roll the croissants: Starting from the wide end with the ube filling, roll each triangle toward the point. Place seam-side down on a parchment-lined baking sheet.
  5. Brush with egg wash: Brush the tops of each pastry generously with more egg wash for a golden finish.
  6. Bake until golden: Bake for 15-20 minutes or until the tops are golden brown. If the pastry isn’t cooked through but the tops are browning too quickly, cover with aluminum foil and bake for a few more minutes.
  7. Cool and serve: Let the ube croissants rest for 5-10 minutes before serving to allow the filling to set slightly.

Notes

  • Use all-butter puff pastry like Dufour brand for the flakiest, most flavorful results. Thaw according to package directions and keep cold while working.
  • Don’t overfill the pastries – stick to 1 tablespoon of ube halaya per croissant to prevent leaking during baking.
  • If your puff pastry gets too warm while working with it, refrigerate for 10 minutes before continuing to prevent the butter from melting out.
  • Store leftovers in an airtight container at room temperature for up to 2 days. Reheat in a 350°F oven for 5-7 minutes to restore crispness.
  • For even browning, rotate the baking sheet halfway through baking time.
  • Find Tropics brand ube halaya at Asian markets or online – it has the perfect jammy consistency for this recipe.
