Ube mini cheesecakes are individual baked cheesecakes with a buttery Oreo cookie crust and a rich, purple ube filling. You mix cream cheese, sugar, egg, vanilla, ube extract, and a little flour, press an Oreo crust into a muffin pan, and bake at 325F for about 18 minutes. No water bath, no springform, no fuss.
The first time I pulled a tray of these out of the fridge, I told myself I would have just one to “test” it. That plan lasted about four minutes. If you love a dense, rich cheesecake, the kind that slices clean and tastes like it came from a bakery case, these little ube ones are going to get you.

The magic is the contrast. You get a dark, cocoa-forward Oreo crust against a smooth, sweet, faintly nutty ube layer, all in a two-bite package. The muffin pan does the portioning for you, so every one has the same ratio of crust to filling.

What does ube cheesecake taste like?
Ube cheesecake tastes like a tangy vanilla cheesecake with a mellow, nutty sweetness on top, somewhere between vanilla, white chocolate, and pistachio. Are these the same as 3-ingredient Oreo cheesecake bites?
Not quite. The viral 3-ingredient Oreo cheesecake bites keep things ultra minimal (usually just cream cheese, sugar, and Oreos, sometimes no-bake). These ube mini cheesecakes add an egg, a splash of vanilla, ube extract, and a spoon of flour so you get a real baked cheesecake texture with a set, sliceable center instead of a soft dip. Tips for making ube mini cheesecakes
1. Use room-temperature cream cheese
Cold cream cheese fights the mixer and leaves you with lumps you can never fully beat out. Let your 8oz block sit on the counter for 30 to 45 minutes first, then it whips into a silky batter in under a minute.
2. Grind the Oreos fine, do not just crush them
You want a true crumb, no big chunks, so the crust presses into an even layer that holds together when you lift each cheesecake out. A food processor gets you there in a few pulses. Whole Oreos go in, cream and all, no need to scrape the filling.
3. Do not overfill the muffin cups
Fill almost to the top, not over. The batter puffs slightly as it bakes and settles as it cools, and a slight underfill makes them way easier to pop out clean later.
4. Pull them when the centers are just set
At around 18 minutes the tops should look matte with a very slight jiggle in the middle. They finish setting in the fridge, so a touch underdone beats overbaked and cracked every time.
5. Respect the chill time
The hour on the counter plus at least four hours (ideally overnight) in the fridge isn’t optional. That is when the texture goes from soft to that dense, clean-slicing cheesecake bite.
Storage and leftovers
These are great make-ahead dessert. Keep the ube mini cheesecakes in a covered container in the fridge and they hold their texture for up to 5 days. Because they’re already portioned, they’re perfect for grabbing one at a time.
They also freeze really well. Freeze them on a tray until solid, then move to a zip bag or airtight container for up to 2 months, and thaw in the fridge overnight before serving.
