For the base:

  • 3 tablespoons unsalted butter
  • 10 oz marshmallows (usually one standard bag)
  • 1/2 to 1 teaspoon ube extract (I use 1 teaspoon for deep color and strong flavor)
  • 5 cups Rice Krispies cereal
  • 1 cup crumbled Oreo Thins

Substitution notes:

You can use regular Oreos if that’s what you have, just crush them smaller. For a different twist, try using Golden Oreos for a lighter flavor. If you can’t find ube extract locally, it’s available on Amazon or at Filipino grocery stores.

Instructions

  1. Melt the butter in a large pot over LOW heat. If the heat is too high, the marshmallows won’t get that stringy, gooey consistency once mixed together and set. It’ll kind of get hard instead. While it’s melting, crumble your Oreo Thins into small pieces (I like to put them in a ziplock bag and crush them with my hands) and set them aside.
  2. Once the butter is completely melted, pour in the entire bag of marshmallows. Stir occasionally as they melt. This usually takes about 5 minutes on low heat. You want them completely smooth with no lumps.
  3. Once the marshmallows are fully melted and smooth, add in the ube extract. Mix it really well so the color is even throughout. The mixture should turn a beautiful purple color. Remove the pot from heat immediately.
  4. Pour in the Rice Krispies and crumbled Oreos. Here’s what I do: I mix the cereal and Oreos together on top of the melted marshmallow for a few seconds to distribute the Oreo pieces evenly, then fold everything together until every piece is coated. Work quickly here!
  5. Transfer the mixture to a small or medium rectangular baking pan that’s lined with parchment paper.
